How to Make Zesty Sunshine Grapefruit Yogurt Cake
- Preheat your oven to 350°F (175°C) and prep an 8-inch cake pan by greasing, flouring, or lining it with parchment paper.
- Whisk together the dry ingredients: in a large bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt.
- Blend the wet ingredients in another bowl: mix Greek yogurt, eggs, vegetable oil, grapefruit juice, and zest until smooth.
- Combine the wet and dry mixtures carefully: pour the wet ingredients into the dry ones, stirring gently until just combined.
- Pour and smooth the batter into your prepared pan, then bake for 30-35 minutes until a toothpick comes out clean.
- Cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before serving.
