Salad Preparation
- Preheat your grill or skillet to medium heat. Season the chicken breasts with salt and pepper, then cook for 6-7 minutes on each side until they reach an internal temperature of 165°F (75°C). Let the chicken rest for a few minutes before slicing.
- In a small bowl, whisk together fresh ginger, lime juice, olive oil, salt, and pepper until well combined. Taste and adjust the seasoning if necessary for that perfect zing!
- While the chicken is resting, slice your ripe strawberries and red onion.
- In a large bowl, gently mix the fresh spinach, sliced strawberries, and red onion together.
