Method
 

Salad Preparation
  1. Preheat your grill or skillet to medium heat. Season the chicken breasts with salt and pepper, then cook for 6-7 minutes on each side until they reach an internal temperature of 165°F (75°C). Let the chicken rest for a few minutes before slicing.
  2. In a small bowl, whisk together fresh ginger, lime juice, olive oil, salt, and pepper until well combined. Taste and adjust the seasoning if necessary for that perfect zing!
  3. While the chicken is resting, slice your ripe strawberries and red onion.
  4. In a large bowl, gently mix the fresh spinach, sliced strawberries, and red onion together.
  5. Place the sliced grilled chicken on top of the spinach mixture and drizzle generously with the zingy ginger-lime dressing. Toss lightly to ensure everything is coated well.
