  1. Begin by gathering all your ingredients. Preheat your oven to 400°F (200°C) or prepare your grill.
  2. Combine lemon juice, zest, olive oil, garlic powder, oregano, black pepper, and salt in a mixing bowl. Marinate the chicken for at least 30 minutes.
  3. Decide to bake or grill. If baking, spray a baking dish with nonstick spray. For grilling, brush grates with oil.
  4. Bake for 25-30 minutes until internal temperature reaches 165°F (75°C) or grill for about six minutes per side.
  5. Let the chicken rest for 5 minutes after cooking to redistribute the juices.
  6. Slice the chicken against the grain, serve with extra lemon wedges and any leftover marinade or a salad.
