Method
 

Preparation Steps
  1. Preheat your oven to 425°F to prepare for roasting the sweet potatoes.
  2. Peel and cube the sweet potatoes into uniform pieces. Toss them in olive oil and spices, then spread them on a baking sheet. Roast for 20-25 minutes until tender and golden brown, stirring halfway.
  3. In a skillet over medium heat, brown the ground beef for about 5 minutes, breaking it apart. Drain excess fat, add taco seasoning and water, and simmer for around 5 minutes until thickened.
  4. In a bowl, mix cottage cheese with garlic powder, onion powder, salt, pepper, and chopped parsley until smooth and creamy.
  5. Assemble the bowls starting with sweet potatoes, then add seasoned beef, cottage cheese mixture, and garnishes like avocado and jalapeños.
