Preparation
  1. Rinse 1 cup of quinoa under cold water. Cook in a saucepan with 2 cups of water or vegetable broth, bring to boil, reduce heat, and cover. Simmer for about 15 minutes until fluffy.
  2. In a medium saucepan over medium heat, combine 1 cup of chopped pecans, 2 tablespoons of pure maple syrup, ½ teaspoon of cinnamon, and a pinch of kosher salt. Stir until syrup thickens, about 5-7 minutes. Transfer to cool.
  3. In a small bowl, whisk together 1/4 cup of fresh squeezed orange juice, 2 tablespoons of apple cider vinegar, 3 tablespoons of olive oil, 1 tablespoon of Dijon mustard, and a pinch of salt. Set aside.
  4. In a large bowl, layer the spring mix and quinoa. Top with sliced oranges, grapefruit, pomegranate arils, and cooled pecans.
  5. Drizzle dressing over the salad just before serving. Toss gently to mix while keeping greens crispy.

Notes

Add sliced avocado for extra creaminess and nutrition. Always use fresh squeezed orange juice for best flavor. Store quinoa and dressing separately for meal prep. Quinoa can be frozen for up to 3 months.
