- Start by sautéing boneless, skinless chicken breasts in a medium heat skillet until tender and fully cooked, about 20 minutes. After cooking, shred the chicken using two forks and let it cool slightly.
- In a large mixing bowl, combine the shredded chicken, buffalo sauce, and softened cream cheese. Stir until smooth and well-blended.
- Grab a tortilla and place about 2-3 tablespoons of the chicken mixture in the center. Roll the tortilla tightly around the filling and secure with a toothpick if necessary.
- Preheat your oven to 400°F (200°C). Arrange the taquitos seam-side down on a parchment-lined baking sheet. Bake for 15-20 minutes until golden brown and crispy.
- Once baked, remove them from the oven and top with chopped green onions. Serve with a side of sour cream for dipping.
Notes
Consider adding diced bell peppers or spinach to the filling for extra nutrition.
