  • 3 pounds Chuck Roast Well-marbled cuts for tenderness
  • 4 cloves Garlic Minced
  • 1 tablespoon Fresh Thyme Or dried thyme in less quantity
For the Vegetables
  • 4 large Carrots Cut into chunks
  • 2 medium Onions Sweet or yellow, chopped
  • 4 medium Potatoes Yukon Gold or Russet, quartered
For the Broth
  • 4 cups Beef Broth Low-sodium preferred
  • 2 tablespoons Olive Oil For searing

Method
 

Cooking Instructions
  1. Preheat the Oven to 325°F (165°C).
  2. Sear the chuck roast in olive oil, seasoned with salt and pepper, for about 4 minutes on each side.
  3. Remove the roast, sauté the onions and garlic in the drippings for about 3 minutes.
  4. Deglaze the pot with beef broth, scraping up brown bits. Return roast and add vegetables and thyme.
  5. Cover and braise in the oven for about 3 hours until fork-tender.
  6. Let the roast rest for 10 minutes before slicing and serve with vegetables and broth.

Notes

Optional: Garnish with fresh thyme for enhanced flavor.
