How to Make the Ultimate Carrot Cake
  1. Preheat oven to 350°F (175°C). Prepare two 9-inch round cake pans by greasing and flouring them or lining with parchment paper.
  2. In a large bowl, whisk together the all-purpose flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, beat together the granulated sugar and vegetable oil until well combined. Add eggs one at a time, then stir in the vanilla extract.
  4. Gradually fold the dry mixture into the wet ingredients, then gently fold in the grated carrots and chopped walnuts (or chosen mix-ins).
  5. Divide the batter into prepared pans. Bake for 25-30 minutes, or until a toothpick comes out clean. Cool in pans for 10 minutes.
  6. Frost with cream cheese frosting and sprinkle with nuts or cinnamon before serving.

Notes

Optional: Add a drizzle of caramel sauce for an extra indulgent touch. Store the cake in an airtight container for up to 3 days at room temperature.
