- Marinate Chicken: Whisk together olive oil, lime juice, lime zest, chili powder, brown sugar, salt, cumin, smoked paprika, onion powder, garlic powder, chipotle powder, and pepper. Coat the chicken thoroughly in the marinade and let it sit for 15-30 minutes.
- Cook Chicken: Preheat grill or skillet over medium-high heat. Grill chicken for 5-7 minutes on each side until cooked through. Allow to rest for 5 minutes before slicing.
- Prepare Avocado Salsa: In a bowl, combine tomatoes, corn, red onion, bell pepper, jalapeño, cilantro, garlic, lime juice, cumin, salt, and pepper. Gently fold in diced avocados just before serving.
