Ingredients
  

For the Chicken
  • 1 lb boneless, skinless chicken breasts/thighs Cut into strips or chunks for quick cooking.
  • 1/2 cup sweet chili sauce Provides sweetness and a gentle kick.
  • 2 tablespoons soy sauce Opt for low-sodium or tamari for gluten-free.
  • 1 tablespoon lime juice Freshly squeezed preferred.
  • 2 cloves garlic Minced.
  • 1 teaspoon freshly grated ginger
  • 1 tablespoon olive oil or avocado oil For cooking the chicken.
For the Creamy Spread
  • 1/3 cup mayonnaise or Greek yogurt Adds creaminess.
For the Wraps
  • 4 large flour tortillas or spinach wraps Choose your base.
  • 2 cups shredded lettuce
  • 1 cup shredded red cabbage
  • 1 large carrot Julienned or grated.
  • 1/2 each English cucumber Cut into thin matchsticks.
  • 1/4 cup fresh cilantro Roughly chopped.
  • 2 each green onions Thinly sliced.

Method
 

Preparation
  1. In a bowl, whisk together sweet chili sauce, soy sauce, lime juice, garlic, and ginger. Coat the chicken pieces thoroughly and let them marinate for 15 minutes to 4 hours.
  2. In another bowl, mix together the mayonnaise (or Greek yogurt) with extra sweet chili sauce and lime juice until smooth and creamy.
  3. Heat olive or avocado oil in a skillet over medium heat. Add the marinated chicken and cook for 5-7 minutes, stirring occasionally, until cooked through.
  4. Pour the reserved marinade into the skillet with the chicken and simmer for 1-2 minutes until the sauce thickens slightly.
  5. Warm tortillas in a microwave for 30 seconds or in a dry pan until pliable.
  6. On each tortilla, spread a layer of the creamy sauce. Layer with fresh vegetables and top with the glazed chicken.
  7. Fold the sides of the tortilla inward and roll tightly from the bottom up. Slice diagonally to serve.

Notes

For maximum flavor, marinate the chicken for closer to 4 hours. Garnish wraps with extra cilantro if desired.
