Preparation
- In a bowl, whisk together sweet chili sauce, soy sauce, lime juice, garlic, and ginger. Coat the chicken pieces thoroughly and let them marinate for 15 minutes to 4 hours.
- In another bowl, mix together the mayonnaise (or Greek yogurt) with extra sweet chili sauce and lime juice until smooth and creamy.
- Heat olive or avocado oil in a skillet over medium heat. Add the marinated chicken and cook for 5-7 minutes, stirring occasionally, until cooked through.
- Pour the reserved marinade into the skillet with the chicken and simmer for 1-2 minutes until the sauce thickens slightly.
- Warm tortillas in a microwave for 30 seconds or in a dry pan until pliable.
- On each tortilla, spread a layer of the creamy sauce. Layer with fresh vegetables and top with the glazed chicken.
- Fold the sides of the tortilla inward and roll tightly from the bottom up. Slice diagonally to serve.
Notes
For maximum flavor, marinate the chicken for closer to 4 hours. Garnish wraps with extra cilantro if desired.
