  • 1 pound Boneless Chicken Breasts Replace with tofu for a vegetarian option.
  • 1 cup Sweet Corn Frozen corn can be used for convenience.
  • 4 cups Chicken Broth Swap for vegetable broth for vegetarian option.
  • 3 cloves Garlic Minced.
  • 1 tablespoon Ginger Grated fresh ginger is best.
  • 2 tablespoons Soy Sauce Adjust to taste for sodium control.
  • 2 stalks Green Onions For garnish.
  • 1 tablespoon Sesame Oil Use olive oil if not available.
  • 2 large Eggs Optional.
For the Garnish
  • 2 stalks Extra Green Onions For topping.

Method
 

Directions
  1. Dice boneless chicken breasts into bite-sized pieces.
  2. In a pot, heat sesame oil over medium heat. Add minced garlic and grated ginger, sauté until fragrant, about one minute.
  3. Add the diced chicken pieces, season with salt and pepper, and cook until the chicken is no longer pink, approximately 5 minutes.
  4. Pour in the chicken broth, scraping the bottom of the pot to dissolve any flavorful bits. Add the sweet corn and let simmer for 10 minutes.
  5. Stir in soy sauce and sliced green onions, allowing to meld for a couple of minutes.
  6. Ladle the warm soup into bowls, garnishing with extra green onions and serve hot.

Notes

Optional to drizzle sesame oil before serving for extra flavor.
