Directions
- Dice boneless chicken breasts into bite-sized pieces.
- In a pot, heat sesame oil over medium heat. Add minced garlic and grated ginger, sauté until fragrant, about one minute.
- Add the diced chicken pieces, season with salt and pepper, and cook until the chicken is no longer pink, approximately 5 minutes.
- Pour in the chicken broth, scraping the bottom of the pot to dissolve any flavorful bits. Add the sweet corn and let simmer for 10 minutes.
- Stir in soy sauce and sliced green onions, allowing to meld for a couple of minutes.
- Ladle the warm soup into bowls, garnishing with extra green onions and serve hot.
Notes
Optional to drizzle sesame oil before serving for extra flavor.
