Preparation
- Preheat Traeger: Set your Traeger grill to smoke mode or heat it to 225°F (107°C).
- Prepare Marinade: In a mixing bowl, combine gochujang, soy sauce, sesame oil, ginger, garlic, and any optional spices.
- Marinate Roast: Place your chuck roast in a resealable bag or dish, pour marinade over it, seal and marinate for at least 1 hour, ideally overnight.
- Sear Roast: Pat roast dry, and in a hot skillet with oil, sear the roast on all sides until browned.
- Smoke Roast: Transfer seared roast to preheated Traeger, close lid and smoke for about 4 hours, until internal temperature reaches 200°F (93°C).
- Rest & Serve: Allow roast to rest for 10 minutes before slicing. Serve over rice or noodles, garnished with green onions and sesame seeds.
Notes
For an added flavor boost, serve alongside a side of traditional kimchi! Consider adding a splash of soy sauce while reheating to revitalize flavors.
