Ingredients
  

For the Roast
  • 1 piece Chuck Roast substitute with brisket for a different texture
  • 2 tablespoons Gochujang swap with sriracha for a similar flavor
For the Marinade
  • 1/2 cup Soy Sauce opt for low-sodium for a healthier twist
  • 2 tablespoons Sesame Oil use olive oil if you're out
  • 1 tablespoon Ginger freshly grated; ground ginger works in a pinch
  • 4 cloves Garlic minced; garlic powder can replace fresh if necessary
For Garnish
  • 2 tablespoons Green Onions sliced for added fresh crunch
  • 1 tablespoon Sesame Seeds sprinkled on top for texture

Method
 

Preparation
  1. Preheat Traeger: Set your Traeger grill to smoke mode or heat it to 225°F (107°C).
  2. Prepare Marinade: In a mixing bowl, combine gochujang, soy sauce, sesame oil, ginger, garlic, and any optional spices.
  3. Marinate Roast: Place your chuck roast in a resealable bag or dish, pour marinade over it, seal and marinate for at least 1 hour, ideally overnight.
  4. Sear Roast: Pat roast dry, and in a hot skillet with oil, sear the roast on all sides until browned.
  5. Smoke Roast: Transfer seared roast to preheated Traeger, close lid and smoke for about 4 hours, until internal temperature reaches 200°F (93°C).
  6. Rest & Serve: Allow roast to rest for 10 minutes before slicing. Serve over rice or noodles, garnished with green onions and sesame seeds.

Notes

For an added flavor boost, serve alongside a side of traditional kimchi! Consider adding a splash of soy sauce while reheating to revitalize flavors.
