- Preheat your oven to 400°F (200°C).
- Heat olive oil in a skillet over medium heat. Sauté chopped onions until translucent, about 3-4 minutes.
- Add garlic and mushrooms, cook until mushrooms are tender, around 5 minutes.
- Incorporate zucchini and grated carrots; cook for another 2-3 minutes.
- Stir in fresh spinach, season with salt, black pepper, and dried thyme.
- Cool the mixture slightly before mixing in breadcrumbs and cheese.
- Roll out the thawed puff pastry on a floured surface until about 1/8 inch thick.
- Spoon generous portions of the vegetable filling along one edge and roll tightly, sealing edges.
- Transfer the rolled parcel seam side down onto a parchment-lined baking sheet. Brush the top with egg wash and sprinkle with seeds.
- Bake for 25-30 minutes until parcels puff up and turn golden brown.
