Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Heat olive oil in a skillet over medium heat. Sauté chopped onions until translucent, about 3-4 minutes.
  3. Add garlic and mushrooms, cook until mushrooms are tender, around 5 minutes.
  4. Incorporate zucchini and grated carrots; cook for another 2-3 minutes.
  5. Stir in fresh spinach, season with salt, black pepper, and dried thyme.
  6. Cool the mixture slightly before mixing in breadcrumbs and cheese.
  7. Roll out the thawed puff pastry on a floured surface until about 1/8 inch thick.
  8. Spoon generous portions of the vegetable filling along one edge and roll tightly, sealing edges.
  9. Transfer the rolled parcel seam side down onto a parchment-lined baking sheet. Brush the top with egg wash and sprinkle with seeds.
  10. Bake for 25-30 minutes until parcels puff up and turn golden brown.
