Preparation
- Chop fresh cilantro and slice lime into wedges. If using fresh corn, cut it off the cob.
Cooking
- Heat the medium skillet over medium heat and add ground lamb. Brown it for about 8-10 minutes.
- Stir in sweet corn and taco seasoning, allowing the mixture to simmer for about 5 minutes.
- While the filling simmers, warm the tortillas.
- Assemble tacos by spooning the lamb and corn mixture onto tortillas, topped with cilantro and lime juice.
- Serve immediately on a platter.
