Ingredients
  

For the Filling
  • 1 pound Ground Lamb or substitute with ground beef, chicken, or turkey
  • 1 cup Sweet Corn fresh corn off the cob or canned corn
  • 1 medium Onion yellow or red onions, or shallots for milder flavor
  • 2 cloves Garlic fresh minced or garlic powder
  • 2 tablespoons Taco Seasoning pre-made mix or homemade spices
For the Tortillas
  • 8 pieces Tortillas fresh corn tortillas preferred
For Toppings
  • 1/4 cup Cilantro omit if desired or substitute with parsley
  • 2 tablespoons Lime Juice fresh lime recommended

Method
 

Preparation
  1. Chop fresh cilantro and slice lime into wedges. If using fresh corn, cut it off the cob.
Cooking
  1. Heat the medium skillet over medium heat and add ground lamb. Brown it for about 8-10 minutes.
  2. Stir in sweet corn and taco seasoning, allowing the mixture to simmer for about 5 minutes.
  3. While the filling simmers, warm the tortillas.
  4. Assemble tacos by spooning the lamb and corn mixture onto tortillas, topped with cilantro and lime juice.
  5. Serve immediately on a platter.

Notes

Feel free to customize with additional toppings like cheese or jalapeƱos. Leftover filling can be stored in an airtight container in the fridge for up to three days.
