Ingredients
  

For the Chicken Marinade
  • 2 lbs Boneless, skinless chicken breasts Can be swapped with turkey or tofu.
  • 2 tbsp Olive oil Avocado oil can be used.
  • 2 tbsp Lime juice Can substitute with lemon juice.
  • 1 tbsp Chipotle chili powder Reduce for milder flavor.
  • 1 tsp Smoked paprika Use fresh for best flavor.
  • 1 tsp Garlic powder Fresh garlic can be used.
  • 1 tsp Onion powder Fresh onions optional.
  • 1 tsp Cumin
  • 1 tsp Salt Adjust to taste.
  • 1 tsp Pepper Adjust to taste.
For the Burrito Assembly
  • 4 large Flour tortillas Gluten-free tortillas are an option.
  • 2 cups Cooked rice White or brown; quinoa or cauliflower rice can be substituted.
  • 1 can Black beans Can substitute with pinto beans or lentils.
  • 1 cup Shredded cheese Cheddar or Monterey Jack.
  • 1 cup Shredded lettuce Optional toppings include diced tomatoes and corn.
  • 1 cup Diced tomatoes Optional topping.
  • 1 cup Corn Optional topping.
  • 1/4 cup Chopped cilantro Optional.
  • 1/2 cup Chipotle ranch dressing Adjust amount for milder flavor.

Method
 

Preparation
  1. Marinate Chicken: In a bowl, combine olive oil, lime juice, chipotle chili powder, smoked paprika, garlic powder, onion powder, cumin, salt, and pepper. Coat each chicken breast thoroughly and refrigerate for at least 20 minutes to enhance the flavor.
  2. Grill Chicken: Preheat the grill to medium-high heat. Grill each marinated chicken breast for about 6-8 minutes on each side or until it reaches an internal temperature of 165°F (74°C). Allow the chicken to rest briefly before slicing it into strips.
  3. Prepare Fillings: While chicken rests, warm the flour tortillas in a pan. Heat the cooked rice and black beans until warmed throughout.
  4. Assemble Burritos: Place chipotle ranch dressing on each tortilla. Layer the rice, black beans, sliced grilled chicken, shredded cheese, lettuce, diced tomatoes, and optional corn. Sprinkle with cilantro if desired.
  5. Wrap and Serve: Roll the burritos tightly, tucking in the ends, and return them to the grill for a couple of minutes for a crispy exterior.

Notes
