Preparation
- In a mixing bowl, whisk together the all-purpose flour, instant yeast, sugar, and salt until well blended.
- Gradually pour in the olive oil and warm water while stirring the dry ingredients until it forms a shaggy dough.
- Transfer the dough to a floured surface and knead for 8-10 minutes until soft and elastic. Cover and let rest for 1 hour.
- Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper.
- After rising, punch down the dough and divide it into 4 equal portions. Roll each into a 6-inch circle.
- In a bowl, combine the akkawi and mozzarella cheeses until mixed. Spread this mixture evenly over each rolled dough circle.
- Drizzle olive oil over the cheese and sprinkle za’atar spice on top.
- Bake for 10-12 minutes until the edges are golden brown and the cheese is melted.
- Let cool slightly, garnish with chopped parsley, cut into wedges, and enjoy warm.
