Preparation
- Sear the Meat: Begin by using the sauté function on your Instant Pot to brown the beef chuck on all sides, about 4 minutes per side.
- Sauté the Aromatics: Remove the beef. Add onions and garlic to the pot, cooking until translucent, about 3 minutes.
- Layer with Veggies: Place the beef back into the pot with chopped carrots, potatoes, bay leaves, thyme, Worcestershire sauce, and enough beef broth to cover.
- Pressure Cook: Secure the lid and set your Instant Pot to cook on high pressure for 60 minutes.
- Natural Release: When cooking is complete, allow the pressure to release naturally for about 15 minutes before opening.
- Serve It Up: Remove the beef, let it rest a few minutes before slicing and serve over mashed potatoes or rice.
