For Searing
  • 2 tablespoons Olive Oil Can be substituted with vegetable oil.
For the Aromatics
  • 1 medium Onion Yellow, white, or red onions work.
  • 4 cloves Garlic Minced garlic for best flavor.
For the Vegetables
  • 3 medium Carrots Can swap with parsnips.
  • 4 medium Potatoes Sweet potatoes can be used as an alternative.
For Flavor
  • 2 leaves Bay Leaves Both dried and fresh work.
  • 1 teaspoon Thyme Substitute fresh thyme with one-third the amount of dried.
  • 2 tablespoons Worcestershire Sauce Soy sauce can be an alternative.
  • 2 cups Beef Broth Vegetable broth can be used for a lighter option.

Preparation
  1. Sear the Meat: Begin by using the sauté function on your Instant Pot to brown the beef chuck on all sides, about 4 minutes per side.
  2. Sauté the Aromatics: Remove the beef. Add onions and garlic to the pot, cooking until translucent, about 3 minutes.
  3. Layer with Veggies: Place the beef back into the pot with chopped carrots, potatoes, bay leaves, thyme, Worcestershire sauce, and enough beef broth to cover.
  4. Pressure Cook: Secure the lid and set your Instant Pot to cook on high pressure for 60 minutes.
  5. Natural Release: When cooking is complete, allow the pressure to release naturally for about 15 minutes before opening.
  6. Serve It Up: Remove the beef, let it rest a few minutes before slicing and serve over mashed potatoes or rice.
