Method
 

Preparation
  1. Preheat the Oven: Start by setting your oven to 400°F (200°C). This temperature ensures that your chicken will cook evenly while developing that lovely crispy skin.
  2. Mix the Marinade: In a medium bowl, whisk together the orange marmalade, olive oil, Worcestershire sauce, fresh orange juice, lemon juice, thyme, oregano, salt, and pepper.
  3. Marinate the Chicken: Coat the chicken halves with the marinade, making sure every inch is covered. Let it sit for at least 30 minutes, or refrigerate for up to 2 hours.
  4. Prepare the Roasting Base: In a roasting pan, scatter sliced shallots, along with orange and lemon slices.
  5. Roast the Chicken: Place the marinated chicken on top of the sliced citrus in the roasting pan. Roast for approximately 1 hour and 15 minutes, basting every 20 minutes.
  6. Rest Before Serving: Once done, cover the chicken with foil and allow it to rest for about 10 minutes.

Notes

Optional: Garnish with fresh herbs or additional citrus slices for an extra pop of color and flavor. Save the marinade to reduce it into a sauce.
