For the Filling
  • 8 oz Cream Cheese Can substitute with ricotta
  • 1 cup Fresh Blackberries Use fresh for best flavor
  • 2 md Jalapeños Adjust amount for spice level
  • 1 tsp Garlic Powder Fresh garlic can be used
  • 1 tsp Salt Sea salt recommended
  • 1 tsp Black Pepper
For Garnish
  • 1/4 cup Cilantro Can substitute with parsley

Method
 

Cooking Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Mix the filling by combining cream cheese, chopped blackberries, diced jalapeños, garlic powder, salt, and pepper in a bowl.
  3. Butterfly the chicken breasts to create a pocket for filling.
  4. Stuff each chicken breast with the blackberry-jalapeño mixture and secure with toothpicks.
  5. Sear the chicken in a hot skillet with oil for 3-4 minutes on each side.
  6. Transfer the seared chicken to the oven and bake for 20-25 minutes until the internal temperature reaches 165°F (74°C).
  7. Rest the chicken for a few minutes after baking and garnish with fresh cilantro before serving.
