Ingredients
  

For the Pork Marinade
  • 1 pound Pork Shoulder or Pork Butt Can substitute with grilled tofu for vegetarian option
  • 2 stalks Lemongrass Finely chopped
  • 1 medium Shallot or Sweet Yellow Onion
  • 4 cloves Garlic Minced
  • 3 tablespoons Fish Sauce or Soy Sauce Use tamari for gluten-free
  • 2 tablespoons Oyster Sauce or Vegan Oyster Sauce
  • 1 tablespoon Honey or Maple Syrup Brown sugar can be used as an alternative
For the Bowl
  • 8 ounces Vermicelli Noodles Choose gluten-free if needed
  • 2 cups Lettuce (Romaine or Butter Lettuce)
  • 1 cup Pickled Daikon & Carrots Using pre-pickled can save time
  • 1 cup Cucumbers Sliced thinly
  • 1 cup Mint or Thai Basil Fresh herbs
  • ½ cup Crushed Peanuts Optional, add before serving
For the Dipping Sauce
  • ½ cup Vietnamese Dipping Sauce Store-bought or homemade

Preparation
  1. Marinate the Pork: Combine all marinade ingredients in a bowl, adding the pork and ensuring it's well-coated. Allow it to marinate for at least 30 minutes, or ideally overnight, for maximum flavor.
  2. Prep Your Ingredients: While the pork marinates, cook the vermicelli noodles according to package instructions. Prepare your pickled veggies, chop the cucumbers, and whip up the dipping sauce if you're making it from scratch.
  3. Grill the Pork: Preheat your grill for about 10 minutes until it's hot. Grill the marinated pork for 1-2 minutes on each side until fully cooked, with beautiful char marks showing.
  4. Assemble the Bowl: In a serving bowl, start with a base of cooked vermicelli noodles. Layer on lettuce, pickled veggies, cucumbers, and fresh herbs, then top with the grilled pork. Drizzle with the dipping sauce for that extra burst of flavor.
