Preparation Steps
- Preheat your oven to 425°F (220°C) and prepare a baking sheet by lining it with parchment paper.
- Slice the sweet potatoes into ½-inch thick rounds for even cooking.
- Toss the sweet potato rounds in a large bowl with olive oil, salt, black pepper, and smoked paprika until they are evenly coated.
- Spread the rounds in a single layer on the prepared baking sheet.
- Roast the sweet potatoes in the oven for 25-30 minutes, flipping them halfway through.
- Cool the rounds slightly once they come out of the oven.
- Arrange the crispy rounds on a serving platter.
- Sprinkle crumbled feta generously over each round.
- Drizzle honey atop the sweet potato rounds.
- Garnish with chopped parsley.
Notes
For an extra zing, add a sprinkle of chili flakes for a hint of heat.
