Method
 

Preparation Steps
  1. Preheat your oven to 425°F (220°C) and prepare a baking sheet by lining it with parchment paper.
  2. Slice the sweet potatoes into ½-inch thick rounds for even cooking.
  3. Toss the sweet potato rounds in a large bowl with olive oil, salt, black pepper, and smoked paprika until they are evenly coated.
  4. Spread the rounds in a single layer on the prepared baking sheet.
  5. Roast the sweet potatoes in the oven for 25-30 minutes, flipping them halfway through.
  6. Cool the rounds slightly once they come out of the oven.
  7. Arrange the crispy rounds on a serving platter.
  8. Sprinkle crumbled feta generously over each round.
  9. Drizzle honey atop the sweet potato rounds.
  10. Garnish with chopped parsley.

Notes

For an extra zing, add a sprinkle of chili flakes for a hint of heat.
