- Activate Yeast: In a small bowl, combine warm water and yeast. Allow to sit for 5-10 minutes until foamy.
- Prepare Wet Ingredients: In a large bowl, whisk together Greek yogurt, honey, and yeast mixture.
- Mix Dry Ingredients: In another bowl, combine whole wheat flour, cinnamon, nutmeg, and salt.
- Combine and Knead Dough: Gradually mix dry into wet ingredients until a shaggy dough forms; knead on a floured surface for 8-10 minutes.
- Add Dried Fruit: Fold in dried fruit evenly throughout the dough.
- First Rise: Place dough in a greased bowl, cover, and let rise until doubled in size (about 1 hour).
- Shape Buns: Punch down the dough, divide into pieces, shape into buns, and place on a lined baking tray.
- Second Rise: Cover buns and let rise for another 30 minutes.
- Pipe Crosses: Pipe a cross on each bun with a mixture of flour and water.
- Bake: Preheat oven to 375°F (190°C) and bake for 20-25 minutes.
- Apply Glaze: Brush tops with honey as soon as they come out of the oven.
