- In a large mixing bowl, combine warm water, sugar, and yeast. Allow to sit for about 5-10 minutes until frothy.
- Add all-purpose flour, salt, and olive oil to the bowl. Stir until a cohesive dough forms.
- Turn out the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.
- Transfer dough to a lightly oiled bowl, cover, and let rise in a warm place for about 1 hour or until doubled.
- Punch down the dough, divide into 8 pieces, and roll each into circles about 1/4-inch thick.
- Heat a skillet over medium-high heat and cook each pita for 1-2 minutes per side until puffed and golden.
- Wrap cooked pitas in a clean kitchen towel to keep warm until serving.

Optional: Serve with a sprinkle of za'atar for extra flavor.
