Marinating and Cooking
- Preheat Traeger: Set your Traeger to smoke mode or 225°F (107°C) for optimal cooking.
- Make Marinade: In a mixing bowl, combine gochujang, soy sauce, sesame oil, grated ginger, and minced garlic until smooth.
- Marinate Roast: Place chuck roast in a resealable bag, pour in marinade, and refrigerate for at least one hour or overnight.
- Sear the Roast: Pat the roast dry and sear it in a hot skillet until browned on all sides.
- Smoke Low & Slow: Transfer roast to Traeger and smoke for about 4 hours or until internal temperature reaches 200°F (93°C).
- Rest and Serve: Let roast rest for 10 minutes before slicing, then serve over rice or noodles, garnished with green onions and sesame seeds.
Notes
Optional: Drizzle more sesame oil over the finished roast before serving.
