  • 2 tablespoons Gochujang Adjust based on heat preference.
For the Marinade

  • 2 tablespoons Sesame Oil Adds a lovely nutty flavor.
  • 1 tablespoon Fresh Ginger Grated.
  • 4 cloves Garlic Minced.
For Garnishing
  • 2 scallions Sliced Green Onions Adds freshness.
  • 1 tablespoon Toasted Sesame Seeds For crunch and nuttiness.

Method
 

Marinating and Cooking
  1. Preheat Traeger: Set your Traeger to smoke mode or 225°F (107°C) for optimal cooking.
  2. Make Marinade: In a mixing bowl, combine gochujang, soy sauce, sesame oil, grated ginger, and minced garlic until smooth.
  3. Marinate Roast: Place chuck roast in a resealable bag, pour in marinade, and refrigerate for at least one hour or overnight.
  4. Sear the Roast: Pat the roast dry and sear it in a hot skillet until browned on all sides.
  5. Smoke Low & Slow: Transfer roast to Traeger and smoke for about 4 hours or until internal temperature reaches 200°F (93°C).
  6. Rest and Serve: Let roast rest for 10 minutes before slicing, then serve over rice or noodles, garnished with green onions and sesame seeds.

Notes

Optional: Drizzle more sesame oil over the finished roast before serving.
