Preparation
- Preheat your oven to 350°F (175°C) and prepare a loaf pan by lining it with parchment paper.
- In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Whisk thoroughly.
- In another bowl, mix together the almond milk, vegetable oil, fresh grapefruit juice, and grapefruit zest until well combined.
- Gradually pour the wet mixture into the dry ingredients and gently mix until just combined.
- Pour the batter into the prepared loaf pan and bake for approximately 45-50 minutes.
- Let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.
Notes
Dust with powdered sugar before serving for a lovely finish. Avoid overmixing the batter for a lighter cake texture.
