  • 1 cup almond milk soy or oat milk work well as substitutes
  • 1/2 cup vegetable oil melted coconut oil can be used for unique flavor
  • 1/2 cup fresh grapefruit juice lemon or orange juice can be good alternatives
  • 1 tablespoon grapefruit zest feel free to substitute with lemon or lime zest

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan by lining it with parchment paper.
  2. In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Whisk thoroughly.
  3. In another bowl, mix together the almond milk, vegetable oil, fresh grapefruit juice, and grapefruit zest until well combined.
  4. Gradually pour the wet mixture into the dry ingredients and gently mix until just combined.
  5. Pour the batter into the prepared loaf pan and bake for approximately 45-50 minutes.
  6. Let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Notes

Dust with powdered sugar before serving for a lovely finish. Avoid overmixing the batter for a lighter cake texture.
