- Begin by gathering all your ingredients. Preheat your oven to 400°F (200°C) if you’re baking, or prepare your grill for a sunny barbecue.
- In a mixing bowl, whisk together freshly squeezed lemon juice and zest, olive oil, garlic powder, oregano, black pepper, and salt. Submerge the chicken in this zesty marinade, and let it sit for at least 30 minutes.
- If baking, lightly spray a baking dish with nonstick spray. For grilling, brush your grill grates with a bit of oil.
- If you're baking, let the chicken cook for 25-30 minutes until the juices run clear. If grilling, cook for about six minutes per side until charred.
- Once cooked, let the chicken rest for five minutes to retain juices.
- Slice the chicken against the grain for maximum tenderness. Serve with wedges of lemon and drizzle any leftover marinade on top.
