How to Make Pistachio Matcha Energy Bites
- In a food processor, add the shelled pistachios, rolled oats, and matcha powder. Blend until a sandy texture forms, about 10-15 seconds.
- Next, toss in the pitted Medjool dates and continue to blend for 30 seconds until a moist, sticky dough holds together.
- Transfer to a bowl. Stir in the vanilla extract, chia seeds, and sea salt until well combined.
- Scoop tablespoon-sized portions and roll into smooth balls. Place on a parchment-lined tray.
- If desired, roll in shredded coconut or chopped pistachios for extra crunch. Chill in the refrigerator for 10 minutes before serving.
- Optional: Drizzle a tiny bit of maple syrup or honey over the bites before serving.
