  • 1 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup chopped cilantro
  • 2 tablespoons lime juice

How to Make Shrimp and Avocado Bowls
  1. Combine the shrimp with olive oil, garlic powder, paprika, and a pinch of salt in a bowl. Allow it to marinate for about 15 minutes.
  2. In a separate bowl, gently mix together diced mango, tomatoes, red onion, cilantro, and lime juice. Let it chill in the refrigerator.
  3. Preheat your grill to medium-high heat. Grill the marinated shrimp for 2-3 minutes on each side until pink and slightly charred.
  4. In a small bowl, combine Greek yogurt (or mayo), additional lime juice, and chili sauce. Stir until smooth.
  5. Layer the cooked rice in serving bowls, add grilled shrimp, creamy avocado slices, and mango salsa. Drizzle with lime-chili sauce and serve immediately.
