Ingredients
  

For the Salad
  • 1 cup quinoa Rinse well before cooking.
  • 1 red bell pepper Diced.
  • 2 carrots Shredded.
  • 1 cup cucumber Sliced.
  • 1 bunch green onions Chopped.
  • 1 cup cilantro Chopped.
For the Peanut Dressing
  • 1/4 cup peanut butter Creamy base.
  • 3 tablespoons soy sauce Or tamari for gluten-free.
  • 1 tablespoon lime juice Freshly squeezed.
  • 2 tablespoons honey or maple syrup Sweetens dressing.
  • 1 clove garlic Optional for deeper flavor.

Method
 

Preparation
  1. Rinse 1 cup of quinoa under cold water.
  2. In a medium pot, combine rinsed quinoa with 2 cups of water; bring to a boil.
  3. Reduce heat, cover, and simmer for about 15 minutes or until water is absorbed. Fluff and cool.
  4. While cooking, prepare your veggies: dice red bell pepper, shred carrots, slice cucumber, and chop green onions and cilantro.
  5. In a mixing bowl, whisk together 1/4 cup of peanut butter, 3 tablespoons of soy sauce, lime juice, and 2 tablespoons of honey or maple syrup until smooth.
  6. In a large salad bowl, combine cooled quinoa, veggies, and pour dressing over. Mix gently.
  7. Optional: Refrigerate for 30 minutes to enhance flavors. Serve with garnished peanuts.

Notes

Serve with extra lime wedges on the side for a zesty kick.
