Preparation
- Rinse 1 cup of quinoa under cold water.
- In a medium pot, combine rinsed quinoa with 2 cups of water; bring to a boil.
- Reduce heat, cover, and simmer for about 15 minutes or until water is absorbed. Fluff and cool.
- While cooking, prepare your veggies: dice red bell pepper, shred carrots, slice cucumber, and chop green onions and cilantro.
- In a mixing bowl, whisk together 1/4 cup of peanut butter, 3 tablespoons of soy sauce, lime juice, and 2 tablespoons of honey or maple syrup until smooth.
- In a large salad bowl, combine cooled quinoa, veggies, and pour dressing over. Mix gently.
- Optional: Refrigerate for 30 minutes to enhance flavors. Serve with garnished peanuts.
Notes
Serve with extra lime wedges on the side for a zesty kick.
