- In a large mixing bowl, gently mix together the drained black-eyed peas, black beans, and corn until thoroughly combined.
- Toss in halved grape tomatoes, diced bell pepper, chopped red onion, and if you desire some heat, the minced jalapeño. Mix well to combine all the vibrant colors.
- In a separate small bowl, whisk together fresh lime juice, olive oil, cumin, and salt and pepper until you see it emulsify nicely.
- Drizzle the dressing over the bean-vegetable mixture and gently stir until everything is evenly coated in that tangy goodness.
- Gently add the diced avocado and chopped cilantro to the mixture, folding them in carefully to avoid mashing the avocado.
- Give your Cowboy Caviar a taste! If it needs more kick, add extra lime juice, salt, or pepper to suit your taste buds.
- Allow the mixture to sit for 15–30 minutes to let all those delicious flavors meld together before serving. It can be enjoyed chilled or at room temperature.
