Directions
  1. In a large mixing bowl, gently mix together the drained black-eyed peas, black beans, and corn until thoroughly combined.
  2. Toss in halved grape tomatoes, diced bell pepper, chopped red onion, and if you desire some heat, the minced jalapeño. Mix well to combine all the vibrant colors.
  3. In a separate small bowl, whisk together fresh lime juice, olive oil, cumin, and salt and pepper until you see it emulsify nicely.
  4. Drizzle the dressing over the bean-vegetable mixture and gently stir until everything is evenly coated in that tangy goodness.
  5. Gently add the diced avocado and chopped cilantro to the mixture, folding them in carefully to avoid mashing the avocado.
  6. Give your Cowboy Caviar a taste! If it needs more kick, add extra lime juice, salt, or pepper to suit your taste buds.
  7. Allow the mixture to sit for 15–30 minutes to let all those delicious flavors meld together before serving. It can be enjoyed chilled or at room temperature.
