Ingredients
  

For the Caviar
  • 1 can (15 oz) black-eyed peas Drained and rinsed
  • 1 can (15 oz) black beans Drained and rinsed
  • 1 cup corn Fresh, frozen, or canned
  • 1 cup grape tomatoes Halved
  • 1 bell pepper red or yellow Diced
  • 1/2 small red onion Finely chopped
  • 1 jalapeño optional Seeded and minced
For the Dressing
  • 2 limes juice
  • 1/4 cup olive oil
  • 1 teaspoon cumin
  • salt and pepper To taste
For the Creamy Element
  • 1 avocado diced Use firm, ripe avocados
  • 1/4 cup fresh cilantro Chopped

Method
 

Preparation
  1. In a large mixing bowl, gently mix together the drained black-eyed peas, black beans, and corn until well combined.
  2. Toss in the halved grape tomatoes, diced bell pepper, chopped red onion, and minced jalapeño (if using). Stir well.
  3. In a separate small bowl, whisk together the juice of 2 limes, olive oil, cumin, salt, and pepper.
  4. Pour the dressing over the bean and vegetable mixture, stirring until everything is beautifully coated.
  5. Carefully add the diced avocado and chopped cilantro to the mixture, gently folding them in.
  6. Taste your creation and adjust the seasoning with more salt, pepper, or lime juice as necessary.
  7. Allow your Cowboy Caviar to sit for 15–30 minutes at room temperature to let the flavors meld together.
