- In a large mixing bowl, gently mix together the drained black-eyed peas, black beans, and corn until well combined.
- Toss in the halved grape tomatoes, diced bell pepper, chopped red onion, and minced jalapeño (if using). Stir well.
- In a separate small bowl, whisk together the juice of 2 limes, olive oil, cumin, salt, and pepper.
- Pour the dressing over the bean and vegetable mixture, stirring until everything is beautifully coated.
- Carefully add the diced avocado and chopped cilantro to the mixture, gently folding them in.
- Taste your creation and adjust the seasoning with more salt, pepper, or lime juice as necessary.
- Allow your Cowboy Caviar to sit for 15–30 minutes at room temperature to let the flavors meld together.
