  • 1 cup Cherry Tomatoes halved

  • 2 tbsp Olive Oil extra virgin recommended
  • 3 cloves Garlic minced
  • 1 tbsp Lemon Juice freshly squeezed

Method
 

Cooking Instructions
  1. Preheat Oven to 400°F (200°C).
  2. Prepare a baking dish by coating with nonstick spray or olive oil.
  3. Season salmon fillets with olive oil, minced garlic, salt, and pepper.
  4. Add corn and halved cherry tomatoes around the salmon, then squeeze lemon juice over.
  5. Bake for 15-20 minutes until salmon flakes easily at 145°F (63°C).
  6. Serve with leftover juices drizzled over for extra flavor.
