Preparation Steps
  1. Start by spraying your slow cooker with nonstick cooking spray for easy cleanup.
  2. Place the boneless, skinless chicken breasts at the bottom of the slow cooker. Season with salt and pepper.
  3. In a separate bowl, combine the cream of chicken soup, sour cream, soy sauce, minced garlic, and dried thyme. Mix until well blended.
  4. Pour the creamy sauce mixture over the chicken, ensuring each piece is coated evenly.
  5. Set your slow cooker on low for 6-8 hours or high for 3-4 hours until the chicken is tender and fully cooked.
  6. About 30 minutes before serving, crush the Ritz crackers and sprinkle them on top of the chicken and sauce mixture; cover and continue to cook.
  7. Once cooked, scoop and serve hot, optionally garnishing with fresh parsley.
