- Preheat oven to 400°F (200°C).
- Marinate shrimp by combining shrimp with melted butter, minced garlic, chili powder, cumin, smoked paprika, lime juice, salt, and pepper. Let sit for at least 10 minutes.
- Slice bell peppers and red onion thinly. Spread them on a sheet pan, drizzle with olive oil, and season with salt and pepper.
- Layer shrimp over the marinated vegetables on the sheet pan.
- Bake for 15-20 minutes until shrimp are pink and vegetables are tender.
- Garnish with fresh cilantro and serve with warm tortillas.
