Ingredients
  

For the Shrimp
  • 1 pound Large Shrimp, peeled and deveined
  • 3 tablespoons Butter, melted Can substitute with olive oil
  • 4 cloves Garlic, minced
  • 2 teaspoons Chili Powder Taco seasoning can be used as an alternative
  • 1 teaspoon Cumin
  • 1 teaspoon Smoked Paprika Regular paprika can be used in a pinch
  • 1 lime Lime Juice Lemon juice can be a substitute
  • Salt and Pepper Adjust according to preferences
For the Veggies
  • 2 cups Bell Peppers, sliced (red and yellow) Can swap for zucchini or asparagus
  • 1 medium Red Onion, sliced Yellow or white onion are alternatives
For Serving
  • 4 pieces Flour Tortillas Corn tortillas for gluten-free
  • Fresh Cilantro For garnish, optional

Method
 

Instructions
  1. Preheat oven to 400°F (200°C).
  2. Marinate shrimp by combining shrimp with melted butter, minced garlic, chili powder, cumin, smoked paprika, lime juice, salt, and pepper. Let sit for at least 10 minutes.
  3. Slice bell peppers and red onion thinly. Spread them on a sheet pan, drizzle with olive oil, and season with salt and pepper.
  4. Layer shrimp over the marinated vegetables on the sheet pan.
  5. Bake for 15-20 minutes until shrimp are pink and vegetables are tender.
  6. Garnish with fresh cilantro and serve with warm tortillas.

Notes

Optional: Add a squeeze of fresh lime juice before serving for extra zest.
