How to Make One Pot Creamy Sausage and Spinach Pasta
  1. Heat the oil: In a large pot, drizzle the olive oil over medium heat. Let it warm up for about a minute.
  2. Cook the sausage: Add the Italian sausage, breaking it apart as it cooks until nicely browned, about 5 minutes.
  3. Sauté the garlic: Stir in the minced garlic and cook for 1 minute, just until fragrant.
  4. Simmer the broth: Pour in the chicken broth and heavy cream, bringing the mixture to a gentle simmer.
  5. Add tortellini: Gently add the fresh tortellini to the pot, cooking according to package instructions (usually around 5-7 minutes).
  6. Incorporate spinach: Add the fresh spinach and stir until it's wilted, about 1 minute.
  7. Finish with cheese: Stir in the Parmesan cheese until it’s melted and well combined. Season with salt and pepper to taste.

Notes

For an added touch, garnish with extra Parmesan and fresh parsley. Store leftovers in an airtight container for 3-4 days.
