Ingredients
  

For the Chicken
  • 2 pieces boneless skinless chicken breasts
  • 1 tablespoon olive oil can substitute with any cooking oil
  • 1 teaspoon garlic powder or use fresh garlic
  • 1 teaspoon onion powder or fresh onions

For the Rice
  • 1 cup brown rice or cauliflower rice for low-carb
  • 2 cups water or chicken broth broth enhances flavor
For the Sauce
  • 1 cup BBQ sauce your favorite brand or homemade
  • 2 tablespoons honey can substitute with maple syrup
  • 2 tablespoons soy sauce use tamari for gluten-free
For the Toppings
  • 1/4 cup fresh cilantro optional but recommended
  • 2 tablespoons green onions sliced
  • 1/2 cup shredded cheese optional

Method
 

Steps
  1. In a pot, combine brown rice and water or chicken broth. Bring to a boil, then reduce heat, cover, and simmer for 40 minutes until the rice is tender and fluffy.
  2. Heat olive oil in a skillet over medium-high heat. Season chicken breasts with salt, pepper, garlic powder, and onion powder, then cook for 6-7 minutes per side until golden brown and cooked through. Set the chicken aside.
  3. In a bowl, combine BBQ sauce, honey, and soy sauce. Stir until smooth and well-blended.
  4. Once the chicken has cooled slightly, cut it into strips for easy assembly.
  5. In the same skillet used for the chicken, add the sliced chicken and pour in the prepared BBQ sauce mixture. Simmer for 2-3 minutes until the chicken is well-coated and heated through.
  6. Spoon warm brown rice into bowls, top with the BBQ chicken, drizzle additional sauce if desired, and garnish with fresh cilantro, green onions, and shredded cheese, if using.

Notes

For more flavor, marinate the chicken in BBQ sauce for at least an hour before cooking. Store chicken and rice separately if meal prepping.
