How to Make Easy Carrot Cake
  1. Preheat your oven to 350°F (175°C). Prepare two 9-inch round cake pans by greasing and lightly flouring them.
  2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, cinnamon, nutmeg, and salt until combined.
  3. In another bowl, whisk together vegetable oil, eggs, grated carrots, and vanilla extract until smooth.
  4. Gently fold the wet ingredients into the dry mix until just combined, being careful not to overmix.
  5. Divide the batter evenly between the two prepared pans. Smooth the tops and tap to release air bubbles.
  6. Bake in the preheated oven for 25-30 minutes, checking for doneness with a toothpick.
  7. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  8. Once cool, frost with cream cheese frosting or buttercream and serve.
