How to Make Easy Carrot Cake
- Preheat your oven to 350°F (175°C). Prepare two 9-inch round cake pans by greasing and lightly flouring them.
- In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, cinnamon, nutmeg, and salt until combined.
- In another bowl, whisk together vegetable oil, eggs, grated carrots, and vanilla extract until smooth.
- Gently fold the wet ingredients into the dry mix until just combined, being careful not to overmix.
- Divide the batter evenly between the two prepared pans. Smooth the tops and tap to release air bubbles.
- Bake in the preheated oven for 25-30 minutes, checking for doneness with a toothpick.
- Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- Once cool, frost with cream cheese frosting or buttercream and serve.
