  • 2 pieces Chicken Breasts marinate for enhanced flavor
  • 6 cups Fresh Spinach organic recommended
  • 2 cups Strawberries can substitute with blueberries or mangoes
  • 1 piece Avocado ripe is best
  • 1/4 cup Red Onion optional
For the Dressing
  • 1/4 cup Olive Oil extra virgin for quality
  • 2 tablespoons Balsamic Vinegar can swap with lemon juice
  • 1 tablespoon Honey optional

Method
 

Preparation
  1. Preheat your grill to medium-high heat. While it heats up, season the chicken breasts with olive oil, salt, and pepper.
  2. Grill the seasoned chicken for 6-7 minutes on each side until golden brown and reaches an internal temperature of 165°F.
  3. While the chicken is grilling, wash the fresh spinach and slice the strawberries and avocado.
  4. In a large bowl, combine the spinach, strawberries, diced avocados, and optional red onion.
  5. In a separate bowl, whisk together olive oil and balsamic vinegar. Add honey if desired.
  6. Slice the rested grilled chicken and arrange it on top of the salad. Drizzle the dressing before serving.
