Preparation
- Preheat your grill to medium-high heat. While it heats up, season the chicken breasts with olive oil, salt, and pepper.
- Grill the seasoned chicken for 6-7 minutes on each side until golden brown and reaches an internal temperature of 165°F.
- While the chicken is grilling, wash the fresh spinach and slice the strawberries and avocado.
- In a large bowl, combine the spinach, strawberries, diced avocados, and optional red onion.
- In a separate bowl, whisk together olive oil and balsamic vinegar. Add honey if desired.
- Slice the rested grilled chicken and arrange it on top of the salad. Drizzle the dressing before serving.
