- In a bowl, whisk together the neutral oil, agave or maple syrup, mustard, salt, and pepper until well blended. Set aside.
- Drain and press the tofu to remove excess moisture. Slice into 1-inch strips.
- In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and optional paprika. Gradually mix in water until a thick batter forms.
- Dip each tofu strip in the batter, making sure they're fully coated. Cover with panko breadcrumbs.
- Preheat your oven to 350°F (175°C). Arrange coated tofu tenders on a parchment-lined baking tray, spray lightly with oil, and bake for about 30-35 minutes, flipping halfway.
- Brush tenders with the honey mustard sauce, return to oven for an additional 5-8 minutes.
