Ingredients
  

For the Tofu
  • 1 block Extra Firm Tofu Press thoroughly for best texture.
For the Batter
  • 1 cup All-Purpose Flour Substitute with gluten-free flour if needed.
  • 2 tbsp Cornstarch Essential for crispiness.
  • 1 tbsp Baking Powder Helps batter rise.
  • 1 tsp Salt Adjust to taste.
  • 1/2 tsp Paprika Powder Optional.
  • 1 cup Water Add gradually for desired batter thickness.
For the Coating
  • 1 cup Panko Breadcrumbs Use certified gluten-free if needed.
  • 2 tbsp Neutral Oil Any neutral oil works.
For the Sauce
  • 1/4 cup Agave or Maple Syrup Use any liquid sweetener.
  • 1/4 cup Yellow or Dijon Mustard Choose based on preference.
  • 1 pinch Salt Season to taste.
  • 1 dash Pepper Season to taste.

Method
 

Prepare
  1. In a bowl, whisk together the neutral oil, agave or maple syrup, mustard, salt, and pepper until well blended. Set aside.
  2. Drain and press the tofu to remove excess moisture. Slice into 1-inch strips.
  3. In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and optional paprika. Gradually mix in water until a thick batter forms.
  4. Dip each tofu strip in the batter, making sure they're fully coated. Cover with panko breadcrumbs.
  5. Preheat your oven to 350°F (175°C). Arrange coated tofu tenders on a parchment-lined baking tray, spray lightly with oil, and bake for about 30-35 minutes, flipping halfway.
  6. Brush tenders with the honey mustard sauce, return to oven for an additional 5-8 minutes.
