Ingredients
  

For the Casserole Filling
  • 1 lb Ground Beef/Turkey or ground chicken or plant-based meat
  • 1 medium Onion chopped; can substitute with shallots
  • 1 medium Bell Pepper chopped; zucchini can also be used
  • 1 cup Mushrooms sliced; can substitute with fresh spinach or kale
  • 2 tbsp Olive Oil or any neutral cooking oil
  • 1 cup Low Carb Marinara Sauce homemade can be used if unavailable
  • 1 tsp Garlic Powder fresh garlic is a great substitute
  • 1 tbsp Italian Seasoning or use oregano and basil separately
  • 1/2 tsp Red Pepper Flakes omit if a milder taste is preferred
  • to taste Salt and Pepper
For the Cheesy Topping
  • 2 cups Shredded Mozzarella Cheese or cheddar for a different flavor
  • 1/4 cup Grated Parmesan Cheese optional but recommended
  • to taste Pepperoni optional; turkey or vegetarian can be used

Method
 

Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.
  2. In a skillet, heat olive oil over medium-high heat, then add ground beef or turkey. Cook until browned and fully cooked, draining any excess fat.
  3. Add the chopped onion, bell pepper, and mushrooms to the skillet. Sauté for 5-7 minutes until softened.
  4. Stir in the low-carb marinara sauce, garlic powder, Italian seasoning, and red pepper flakes. Allow to simmer for a few minutes.
  5. Carefully transfer the mixture to the greased baking dish, spreading it evenly.
  6. Sprinkle shredded mozzarella and grated Parmesan cheese on top.
  7. If desired, add slices of pepperoni, tucking some at the edges.
  8. Place the casserole in the oven and bake for 20-25 minutes, until the cheese is bubbling and golden brown.
  9. Allow the casserole to rest for 5 minutes before slicing.

Notes

Optional: Garnish with fresh basil before serving. Store leftovers for up to 4 days in an airtight container.
