  • 1 cup Coconut Milk Full-fat adds the richest, creamiest texture to the sauce.
For the Marinade
  • 4 cloves Garlic Cloves Fresh garlic gives the best aroma; smash them before adding.
  • 1 inch Fresh Ginger Peel and grate for a warm, zesty kick that enhances the flavor profile.
  • 1/2 teaspoon Cayenne Pepper Adjust based on your spice tolerance.
  • 1 teaspoon Ground Cumin Provides an earthy undertone.
  • 2 tablespoons Lime Juice Freshly squeezed will brighten the flavor.
Optional Thickener
  • 1 tablespoon Cornstarch Mix with water to thicken the sauce.

Equipment

  • Large skillet
  • Mixing bowl
  • Meat Thermometer
  • zip-top bag

Method

Recipe Steps
  1. Trim excess fat from the chicken breasts and pat them dry.
  2. Combine coconut milk, minced garlic, grated ginger, cayenne pepper, ground cumin, and lime juice in a bowl or zip-top bag.
  3. Add chicken to marinate for at least 30 minutes or overnight for better flavor.
  4. Heat a splash of oil in a large skillet over medium heat. Cook chicken for 5-7 minutes per side until golden brown and cooked through.
  5. Once cooked, pour the reserved marinade into the skillet and let it simmer for around 10 minutes.
  6. For a creamier sauce, mix cornstarch with water, then stir into the simmering sauce until it thickens.
  7. Serve chicken over fluffy white rice or quinoa, drizzling with extra sauce.
