  • 4 fillets Salmon can be replaced with chicken or tofu for different flavor
  • 2 cloves Garlic use fresh minced garlic for best results
  • 3 tablespoons Lemon Juice lime juice can work in a pinch
  • 1 tablespoon Lemon Zest
For the Vegetables
  • 1 cup Cherry Tomatoes can swap with bell peppers or asparagus
  • 1 medium Zucchini broccoli or other seasonal vegetables can also be used
For Roasting
  • 2 tablespoons Olive Oil use to prevent sticking and ensure even cooking
  • 0.5 teaspoon Salt adjust to taste
  • 0.5 teaspoon Pepper adjust to taste

Method
 

Directions
  1. Preheat your oven to 400°F (200°C).
  2. Toss the cherry tomatoes and zucchini slices in a bowl with olive oil, salt, and pepper.
  3. On a lined baking sheet, place the salmon fillets skin-side down. Drizzle with olive oil and squeeze fresh lemon juice over the top.
  4. Sprinkle minced garlic evenly over the salmon. Arrange the seasoned vegetables around the salmon.
  5. Bake for 15-20 minutes until the salmon flakes easily and the vegetables are tender.
  6. Plate the salmon alongside your roasted vegetables and drizzle with more lemon juice if desired.

Notes

For best flavor, serve immediately after baking. Leftover salmon can be used in salads or wraps.
