- Preheat your oven to 400°F (200°C).
- Toss the cherry tomatoes and zucchini slices in a bowl with olive oil, salt, and pepper.
- On a lined baking sheet, place the salmon fillets skin-side down. Drizzle with olive oil and squeeze fresh lemon juice over the top.
- Sprinkle minced garlic evenly over the salmon. Arrange the seasoned vegetables around the salmon.
- Bake for 15-20 minutes until the salmon flakes easily and the vegetables are tender.
- Plate the salmon alongside your roasted vegetables and drizzle with more lemon juice if desired.
