How to Make Irresistible Zesty Lemon Brownies
- Preheat your oven to 350°F (175°C). Prepare an 8-inch square baking pan by lining it with parchment paper.
- In a medium saucepan, melt 1/2 cup of unsalted butter over low heat. Allow it to cool slightly.
- In a large bowl, whisk together the melted butter, 1 cup of granulated sugar, 2 large eggs, 1/4 cup of freshly squeezed lemon juice, and the zest of 2 lemons until smooth.
- In another bowl, mix 1 cup of all-purpose flour and 1 teaspoon of baking powder. Gradually fold this dry mixture into the wet mixture, stirring until just combined.
- Spread the brownie batter evenly in your prepared pan. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
- Allow the brownies to cool in the pan for about 10 minutes. Transfer to a wire rack to cool completely before cutting into squares.
- Optional: Dust with powdered sugar for an added touch of sweetness.
