Preparation
- Preheat your oven to 350°F (175°C). Prepare two round cake pans by greasing and lightly flouring them to ensure easy release once baked.
- Whisk together the dry ingredients. In a mixing bowl, combine the all-purpose flour, baking powder, and salt; set this mixture aside.
- Cream the butter and sugar. In another bowl, use an electric mixer to beat the softened unsalted butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Incorporate eggs and flavor. Add the eggs to the creamed mixture one at a time, mixing well after each addition. Then, pour in the honey and vanilla extract and mix until well-blended.
- Combine wet and dry ingredients. Gradually add your flour mixture to the wet ingredients, alternating with the milk, mixing until just combined.
- Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
- Cool the cakes. Allow them to cool in the pans for about 10 minutes before transferring them to wire racks to cool completely.
- Prepare the frosting. Beat the cream cheese until smooth, then gradually add powdered sugar and brewed coffee, mixing until you reach your desired consistency.
- Frost the cooled cakes generously with your coffee cream cheese frosting, spreading it evenly.
