Ingredients

For the Cake
  • 2 cups All-Purpose Flour Substitute with gluten-free flour for a gluten-free option.
  • 2 tsp Baking Powder Ensure it’s fresh for best results.
  • 1 tsp Salt Use kosher salt or fine sea salt for better taste.
  • 1 cup Unsalted Butter Can be substituted with margarine or vegan butter.
  • 1 cup Granulated Sugar Brown sugar adds moisture and a deeper flavor.
  • 3 large Eggs For eggless options, use flax eggs.
  • 1/2 cup Honey Maple syrup can give a different flavor profile.
  • 1 tsp Vanilla Extract Opt for pure vanilla for the best taste.
  • 1 cup Milk Any milk or plant-based alternative works beautifully.
For the Frosting
  • 8 oz Cream Cheese Full-fat cream cheese ensures a smooth texture.
  • 1 cup Powdered Sugar Can be replaced with a sugar alternative if desired.
  • 1/4 cup Brewed Coffee Decaf can be used for a milder taste.

Equipment

  • Electric Mixer
  • Two round cake pans
  • Mixing bowls
  • Whisk
  • Cooling racks

Method

Preparation
  1. Preheat your oven to 350°F (175°C). Prepare two round cake pans by greasing and lightly flouring them to ensure easy release once baked.
  2. Whisk together the dry ingredients. In a mixing bowl, combine the all-purpose flour, baking powder, and salt; set this mixture aside.
  3. Cream the butter and sugar. In another bowl, use an electric mixer to beat the softened unsalted butter and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Incorporate eggs and flavor. Add the eggs to the creamed mixture one at a time, mixing well after each addition. Then, pour in the honey and vanilla extract and mix until well-blended.
  5. Combine wet and dry ingredients. Gradually add your flour mixture to the wet ingredients, alternating with the milk, mixing until just combined.
  6. Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  7. Cool the cakes. Allow them to cool in the pans for about 10 minutes before transferring them to wire racks to cool completely.
  8. Prepare the frosting. Beat the cream cheese until smooth, then gradually add powdered sugar and brewed coffee, mixing until you reach your desired consistency.
  9. Frost the cooled cakes generously with your coffee cream cheese frosting, spreading it evenly.

Notes

Optional: Garnish with chocolate shavings or a dusting of cocoa powder for an extra touch of elegance. Adjust the powdered sugar for frosting consistency as desired.
