  • 4 fillets Anchovy Fillets Can substitute with capers for vegetarian option.
For the Topping
  • 1 cup Parmesan Cheese Freshly grated; can substitute with feta.
  • 1/2 cup Walnuts Can substitute with pecans or almonds.
For Seasoning
  • 2 tablespoons Olive Oil Extra virgin recommended; can substitute with avocado oil.
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper Freshly ground preferred.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Slice the cabbage into wedges about 1 inch thick.
  3. Drizzle the cabbage wedges with olive oil and season with salt and pepper.
  4. Place anchovy fillets on each wedge.
  5. Arrange the cabbage on a parchment-lined baking sheet and roast for 20-25 minutes.
  6. In the last 5 minutes, add Parmesan and walnuts on top and return to the oven until bubbly.

Notes

For extra flavor, consider drizzling with balsamic glaze before serving. Ensure uniformity when slicing for even roasting.
