Cooking Steps
- Wash and chop your onion and bell pepper into bite-sized pieces, then mince the garlic.
- Heat olive oil in a skillet over medium heat. Season the chicken with salt and pepper, and cook for about 5 minutes on each side until golden brown.
- Remove the chicken from the skillet and add the onion, bell pepper, and garlic. Sauté for about 5 minutes until soft and fragrant.
- Chop the cooked chicken into bite-sized pieces, return to the skillet, and add fresh cranberries. Mix everything together.
- Pour in the low-sodium chicken broth, sprinkle thyme, and let it simmer on low for about 10 minutes until thickened.
- Dish out into bowls and drizzle any remaining sauce over the top before serving.
