Preparation Steps
  1. In a bowl, whisk together soy sauce, mirin, minced garlic, and grated ginger until well combined. Reserve a portion of this mixture for later drizzling.
  2. Place the chicken thighs in a ziplock bag or shallow dish and pour the marinade over them. Let it soak for at least 1 hour, preferably overnight.
  3. Preheat your grill to medium-high, or use a stovetop grill pan.
  4. Grill each chicken thigh for 6-7 minutes on each side until cooked and slightly charred.
  5. Let the grilled chicken rest for a few minutes before slicing.
  6. Serve on a bed of rice or beside vegetables, drizzling with reserved marinade.
