Method
 

Preparation
  1. Slice the boneless, skinless chicken breasts into bite-sized pieces.
  2. Combine the low-sodium soy sauce, brown sugar, minced garlic, grated ginger, and sesame oil in a bowl.
  3. Toss the chicken in the marinade and let it sit for at least 15 minutes.
  4. Heat a tablespoon of oil in a large pan over medium-high heat.
  5. Add the marinated chicken and sauté until it turns golden brown, about 5-7 minutes.
  6. Toss in your choice of colorful vegetables in the last 2 minutes of cooking.
  7. Pour any leftover marinade over the stir-fry in the last minute, allowing it to thicken slightly.
