How to Make Irresistible Healthy Carrot Chocolate Chip Cookies
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together the whole wheat flour and baking soda.
- In another bowl, mix melted coconut oil with honey or maple syrup, then stir in freshly grated carrots.
- Gently pour the wet mixture into the dry ingredients and fold in the chocolate chips.
- Scoop mounds of dough onto the prepared baking sheet, leaving two inches between each. Bake for 12-15 minutes.
- Let the cookies cool on the baking sheet for 5 minutes, then transfer them to wire racks to cool completely.
