  • 1 can Chickpeas or dried chickpeas after soaking
  • 2 cups Bell Peppers sliced
  • 1 cup Zucchini sliced
  • 1 medium Red Onion sliced
For Roasting
  • 2 tablespoons Olive Oil or avocado oil
  • 1 teaspoon Garlic Powder or fresh minced garlic
  • 1 teaspoon Paprika use smoked for more flavor
  • to taste Salt
  • to taste Pepper
For Serving
  • 1 cup Hummus can use flavored varieties

Method
 

How to Make
  1. Preheat your oven to 400°F (200°C).
  2. Toss together chickpeas, bell peppers, zucchini, and red onion with olive oil, garlic powder, paprika, salt, and pepper.
  3. Spread the veggie mixture on a parchment-lined baking sheet.
  4. Roast for 25-30 minutes, stirring halfway through.
  5. Portion the roasted veggies into bowls.
  6. Spoon hummus over the roasted vegetables.
